Recipe of the week: Chicken Shish Kebab

As a lower freshman in college, this is my first finals week. My reaction: “Why does everyone say this is so difficult? All-nighters aren’t necessary. As long as you manage your time wisely, the studying and last minute assignments can be done quickly!” Five hours into anxiety induced procrastination? “Oh.”

It’s become very clear why finals week is so stressful. I only have ten days left for the semester. Ten days. My first semester is almost over. And the only way to reach the finish line is to complete a series of long-winded exams and essays. Anxiety abounds.

During the time I was supposed to get work done, I had the best epiphanies. So in those five hours that I was supposed to be completing assignments, I planned my whole life. Great. If only my exams consisted of: what do you see yourself doing in the next ten years? And knowing me, I’ll probably re-evaluate my plan and start from scratch tomorrow because looking at Microsoft word and my sad textbooks in the corner make me want to cry myself into a puddle.

Thankfully, upon realizing that I had to get work done, I made a schedule for myself that I intend to stick to – after I attempt a complicated recipe (it’s not that bad).

To get a good kick-start to finals week, and because I wasn’t sure when I was going to have an actual meal again, I decided to make chicken shish kebab.

(Note: I wasn’t able to take enough high quality pictures so I’m just going to list the steps and show the pictures after-enjoy!)

 

Ingredients:

-Four large skinned chicken breasts, cubed

-Two Peppers

-Vegetable oil (I used grape seed oil)

-1 ¼ cups of plain yogurt

-2 garlic cloves, crushed

-Juice of ½ a lemon

-1 tablespoon of herb of choice (I used parsley)

-Salt

-Pepper

Step One: To make sauce: put together yogurt, garlic, lemon juice, herb of choice, salt, pepper in a separate bowl and mix together.

Step Two: Cut chicken breasts in to cues. Add to sauce, mix together. Cover to marinate in the refrigerator for an hour. If using wooden skewers, soak them in cold salt water at least half an hour before use (this avoids the wood burning).

Step Three: Preheat your oven to 400 degrees. Place chicken cubes and peppers onto wooden skewers. Cook for about 15 minutes or until golden brown.

Alternate between pepper and chicken. Place skewers on oven pan covered in tin foil-as seen in the picture.
