Insomnia, Already?

The number one thing you should never do when you dorm, is schedule classes with long breaks in between. There are too many opportunities to procrastinate, and my day feels three times as long.

That’s not an exaggeration. I thought that by having large breaks, I would be able to get more work done. Unfortunately, that is not what happened. Because I have so much free time in the middle of the day, I waste my breaks doing little to nothing, and then stay up late finishing my homework. Because I stay up late finishing my work, I sleep later, and wake up even more tired than ever. And because I have to wake up early, and then wait while my day goes by at an agonizingly slow pace, it’s becoming very difficult to function.

I guess the real moral of this story is: don’t procrastinate, and don’t waste your time, but my schedule sure isn’t helping.

Just the other day, I found myself washing my hair with hand-soap. Not that big of a deal, I know, but it gets stranger! I put socks on my hands cause I thought they were my gloves, and walked around all day like that. I guess I could have done weirder things, but it was still pretty strange to me.

While attempting to cook my chicken and potato recipe with lemon and garlic, I (without thinking mind you) put pasta sauce all over the dish. I honestly don’t know what got into me. One minute I was just making one of my favorite dishes, and the next minute it’s covered in tomato sauce.

Now I’ve done some pretty weird things the past few weeks, but this was by far, the most delicious! The dish is probably one of the easiest I’ve made, and it came out pretty good.

 

Ingredients:

-Chicken Breast Packet

-Diced Potatoes (put as many or as little as you want)

-Half a Lemon (squeezed)

-A teaspoon of crushed garlic

-4-5 tablespoons of Butter (or oil)

-Pasta Sauce

-Salt, Pepper

Step One: Defrost the chicken breasts if it was in the freezer. Peel, and dice potatoes. Lay them in a baking dish. Drizzle some lemon juice on top, and spread crushed garlic throughout. Sprinkle some salt and pepper, and distribute all the butter or oil on top.

Step Two: Lay the chicken breasts on top of the potatoes. Drizzle the rest of the lemon juice on top. Pour entire bottle of pasta sauce on chicken and potatoes. Bake in the oven (350 degrees) for about 75 minutes (you may need more time depending on your oven). You will know it is fully cooked if you can easily cut open chicken breasts (no rubbery feeling), and the potatoes are soft.
