Recipe of the Week: Barbequed Steak and Potatoes
Have you ever noticed that when you get upset or stressed, everything just seems to go wrong? It’s a vicious cycle really. When you’re stressed, you’re predisposed to think negatively about everything that happens, so in theory, you get stressed out even more than you already were in the first place over something silly.
Take me for example. Midterms were brutal, and I’ve been under a lot of stress (as
were many of you, I know), but it got ridiculous. The other day, I really wanted a peanut butter and jelly sandwich. Who wouldn’t? Comfort food always helps during stressful times. I was trying to open my strawberry jam jar, but it wouldn’t budge. I tried everything! I tried prying it open with a butter knife, using a can opener, banging the jar against the table, and then my head…you get the point. I was on the verge of tears after about 10 minutes of intense struggle when I had a profound realization.
I had been turning the cap of the jar the wrong way.
The entire time, I was just closing an already closed jar.
I had the jar open within two seconds.
I never cease to amaze myself.
Even earlier today, I had a moment of sheer genius. I had just finished my last midterm (free at last!) when a friend politely asked me what class the midterm was for. For about thirty seconds, I stood there mouth agape trying to remember. This is my life.
Regardless! It’s all over now. I hope you all did well on your midterms, and for those of you who haven’t finished yet, good luck! As a celebration, I made a pretty fancy dinner for my family and myself. This recipe takes a while, but tastes delicious!
Ingredients
Will serve 4 people comfortably
To Marinate Steak
-2 packets of skirt steak
-1/2 cup of olive oil
-1/3 cup of steak sauce (I used Worcestershire sauce, but you can use any)
-1 tablespoon crushed garlic
-2 limes, squeezed/juiced
-4 scallions finely chopped
-Salt
-Ground pepper
-Ground cumin
Baked Potatoes
-4 potatoes cut in half
-Salt
-Ground pepper
-Garlic powder
-Rosemary
-Ground hot pepper
Step One: If the steak was in a freezer, defrost it first. Gather all of the other ingredients. Chop the scallions.
Step Two: In a large plastic bag, combine all of the ingredients together. Add the steak. Leave in the fridge for around an hour to marinate.
Step Three: Cut Potatoes in half and place each half on a separate piece of aluminum foil. Sprinkle all powders and seasoning on top of each potato half. Cover with aluminum foil.
Step Four: Cook both the steak and potatoes on a grill (if you have access to one). If you do not have access to a grill, you can easily cook both steak and potatoes in the oven.
Note: I’ve chosen not to include cooking times and temperatures because it varies according to how long you liked it cooked, and what appliance you’re using to cook it.
